Avocado Lover’s Soup

For all of you avocado lover’s out there, this one’s for you.  While the ingredients are simple, you will be amazed by the flavor of this soup.  Over the last few days I’ve become obsessed with avocados!  They’re not only healthy, but creamy and delicious too.  Avocados, which are actually classified as a fruit, are rich in monounsaturated fat that is easily burned for energy.  One medium avocado provides 22 grams of this fat, plus 20 other nutrients, including: Fiber, Potassium, Vitamin E, B-Vitamins, and Folic Acid.  Go ahead and grab your blender and we’ll get this one started!

Preparation: 10 minutes

Program: Hot Soups

Yield: 2 servings

Ingredients

  • 1 1/2 Avocados
  • 3 medium Tomatoes
  • 1 clove garlic
  • 2 tsp Kosher Salt
  • 1/2 cup Water
  • 1 tsp Spirulina (optional, but recommended)

Directions

1.  Place all ingredients into your Vitamix container and secure lid.

2.  Select Soups program.

[If you are using the 5200 series blender, simply work your way to high setting and leave there for approximately 4-5 minutes or until soup is hot]

3.  Press Start.
4.  Wait for cycle to finish.
5.  Pour and enjoy!
